Ingredients
- 100 mL of water, scant ½ cup
- 50 g high-quality unsweetened cocoa powder, ½ cup
- 100 g brown sugar, ½ cup packed
- 5 g vanilla, 1 teaspoon
- a good pinch of salt, try smoked salt
- 1 tablespoon malted milk powder
- ¼ teaspoon espresso powder
- 1 tablespoon corn syrup
Instructions
- Add all of the ingredients, except the vanilla and salt, to a small saucepan and turn the heat to medium.
- Whisk together until smooth, about 5 to 10 minutes. Be sure to focus on the bottom edge of the pot because the powders tend to get trapped there.
- Turn off the heat and let the mocha sauce cool slightly, then stir in the salt and vanilla.
Notes
1. Cocoa powder takes time to hydrate fully and will depend on the brand you choose. The mixture will look slightly grainy at first, but it becomes smooth as it heats and rests. For the smoothest texture, you can warm the water first, then whisk in the ingredients. I find this mostly unnecessary when using corn syrup.
2. Corn syrup is technically optional, but I recommend using it in all of my syrups because it helps with texture and potential crystallization problems.
3. This recipe will make up to 20 drinks, depending on use. This is a thicker chocolate concentrate and will continue to thicken as it cools. It’s designed for small amounts per drink.

4. This mocha sauce will keep in the fridge for about 2 weeks or so, probably longer, if it's kept in a sanitized air-tight container. The cold temperature may cause this sauce to turn into a paste; just gently warm what you need to bring it back to a drizzly consistency.
5. Can I use white sugar or other types of sugar?
Yes, but... white sugar is just sweet. It doesn't provide the same level of depth and richness as other sugars. Brown sugar, especially dark brown, gives this sauce a fudgy vibe.
