How to make a lemon champagne cocktail
To make this lemon champagne cocktail, start with the lemon simple syrup. Using a vegetable peeler, carefully peel the zest off the lemons, leaving the white pith behind. Add all of the zest to a large mason jar, then set aside.
Heat a saucepan with equal parts water and white granulated sugar. Let the sugar water simmer over medium heat until the sugar dissolves completely, and the syrup thickens slightly.
Remove from the heat and carefully pour into the jar of lemon zest. Allow the simple syrup to cool to room temperature before continuing.
Once the lemon simple syrup cools, strain out the lemon zest. Keep refrigerated.
Add ice, vodka, lemon juice, elderflower liqueur, and lemon simple syrup to a cocktail shaker or glass jar. Shake until cold, then strain into chilled wine glasses. Top with your favorite champagne.
Hint: My favorite champagne is Bellatore Spumante. It's less than 10 dollars at my local grocer. I always have a few bottles in my house.
