How to cook fish: Tortilla Crusted Tilapia
This is the best way to cook tilapia. I made this Tortilla Crusted Tilapia recipe in conjunction with my fish taco recipe. A few years ago, I took a trip to Portland, ME. I had fish tacos for lunch at a local bar, and they were AMAZING. When I came home, I just had to figure out how to recreate them. These tortilla crusted tilapia fillets are just a part of those lovely tacos, but these would be great on their own topped with fresh salsa and a side of rice!

Prep your ingredients...
You want to make sure to pat the fish fillets dry with a paper towel, so the finished crust is crispy. Season both sides of the fillets with salt, peppe, and chili flakes, and prep your flour egg and crust mixtures.
Flour Mixture:
- ½ c. all purpose flour
- 1 tablespoon cornstarch
- ¼ teaspoon pepper
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ¼ teaspoon cayenne pepper
On a plate, combine all ingredients together. Set aside.
Egg mixture
- 2 eggs (beaten)
- ¼ teaspoon pepper
- Crushed chili flakes (optional)
In a bowl, beat together 2 eggs, pepper and chili flakes. Set aside.
Crust
- 1 c. crushed tortilla chips
- 1 teaspoon ground coriander seeds
- ¼ teaspoon pepper
Take 1 c. of crushed tortilla chips, coriander and pepper, mix together onto another plate.
Make your tortilla crusted tilapia...
Line up the flour, egg and crust mixture in a row; then, line a baking sheet with parchment paper and/or cooking oil.
Next, coat both sides of the fillet into the flour mixture (shown above) and shake off the excess.
Then, dip fillet into the egg mixture and shake off the excess. This will help bind the crust to the fillets.
After, coat both sides of the fish in the crust mixture, pressing down to adhere.
Lastly, dip the fillet back into egg mixture and coat once more in the crust mixture. This will make the crust thicker and crunchier.
Bake at 400 degrees for 8 - 10 mins. During the last 3 - 5 mins, broil on high until the crust is golden brown and the fish flakes easily with a fork. The internal temperature of the fish should be 145 degrees.
Serve with guacamole and fresh salsa.

Ingredients
- 3 tilapia fillets

Instructions
- Preheat oven to 400 degrees and prepare baking sheet with parchment paper/cooking spray.
Tilapia
- Pat tilapia fillets with a paper towel to dry. Season both sides with salt, pepper and chili flakes. Set Aside.
- Prepare flour mixture onto a plate: prepare egg mixture in large bowl; prepare crust mixture onto a plate.
- Taking one fillet at a time, coat in flour mixture and shake off the excess. Next, dip fillet into egg mixture and shake off excess. Then, coat fillets in crust mixture and press onto the fish.
- Repeat - Coat the breaded fish in the egg mixture then crust.
- Bake for 8-12 mins. Broil on high for the last 5 mins* Internal temp should be 145 degrees. Fish should flake easily with a fork.
- Serve with Pico de Gallo or use in fish tacos.
