These tzatziki chicken with spicy slaw tacos are my "I can't handle making dinner tonight," dinner. It comes together in 15 - 30 minutes depending on what I serve with it. Typically, my side dish with this recipe is quickly roasted sweet potatoes that I toss with olive oil, smoked paprika, salt, and pepper. I accomplish this by roasting in a 450 degree (F) oven.
What inspired this tzatziki chicken with spicy slaw was a meal kit dinner we had. It was good, but it could've been better. I simplified the recipe, made it more flavorful and wrapped it up in warm, chewy naan bread. If you haven't tried naan, you need to!

How to get started
If you'd like, you can cook some chicken with your favorite everyday seasoning, but to pull this together in a pinch, I use rotisserie chicken and store-bought tzatziki.

This amazingly easy spicy slaw
This spicy slaw is so simple, just a few handfuls of red cabbage, scallions, and cilantro, tossed with a tablespoon of chili garlic sauce. The garlic chili sauce is very spicy, so only use enough to lightly coat the vegetables. You can find garlic chili sauce in the Asian section of your local grocery store.
It only takes five minutes to make, so I recommend remaking this slaw when you need it, doing so will keep it from getting soggy. This slaw is much better when it's crunchy.
How to assemble the tzatziki chicken with spicy slaw
Once you've shredded the chicken and made the slaw, warm up the naan bread. You can do this by toasting it or heating it up in the microwave. I usually do it in the microwave, so I can serve the tzatziki chicken with spicy slaw on a hot plate.
All you have to do is top the naan with the shredded chicken, a spoonful of tzatziki, and a scoop of spicy slaw. That's it. Serve it on a hot plate with a side of sweet potatoes, and you have yourself a fresh and flavorful dinner that didn't take you all night to make!

Notes
Serve with a side of roasted sweet potato fries: Cut sweet potatoes into semi circles. Coat with olive oil, smoked paprika, salt and pepper. Roast in a 450 degree F oven until fork tender, about 20 minutes.
Make slaw as needed instead of saving it, so it stays crunchy.
You can roast chicken breast coated in your favorite seasoning. I usually use smoked paprika, salt and pepper. Bake in a 400 degree oven until the internal temp reaches 160, 20 - 30 minutes. Let rest for 5 minutes and shred.
